It's fast becoming the season for comfort food, and nothing beats an oozy, salty, crunchy jaffle. This winter, our South Yarra Kiosk is serving up a delicious ham, béchamel sauce and cheese toasted snack by Tommy Collins Catering. We asked their Creative Director Tommy McIntosh to share some of his favourite filling combinations.

"Béchamel sauce, Pyengana cheese (from Tasmania, this is the only Australian muslin cloth wrapped cheese, it's hard and very similar to parmesan), good quality dijon mustard, smoky ham and thick cut brioche bread - an incredibly oozy and comforting toasted treat."
My go-to jaffle
"Wagyu pastrami, sauerkraut, dijon mustard, and swiss cheese - most appreciated late at night after a long day working at an event."
My ultimate jaffle
"Pit-smoked beef brisket, mustard, pickles with a mix of both Cheddar and Swiss cheese - nothing beats this combination."
The messy-but-delicious jaffle
"Crumbed steak, napoli sauce, Kewpie Japanese mayonnaise, smoked Cheddar cheese - well worth the mess."
The save-left-overs jaffle
"Save last night's spaghetti meatball or bolognese sauce, add smoked cheddar and fresh basil."
